What is your first food memory?
Grilling Fresh Fish that my dad caught fishing off Dana Point Harbor. I always wanted to help him. Occasionally he would let me make the tartar sauce.
Did you grow up in a cooking family?
Yes, most of my family loved to cook but none of them did it for a living.
Who has influenced your cooking the most?
Why did you become a chef?
People have to eat and most people like good food and I just happen to love to cook good food!
What did you want to be when you grew up?
Well it was either a pro surfer or a chef. I guess you know which one I was better at!
If I weren’t a chef, I’d be:
I really don’t know. I always wanted to be a Chef.

Christian Rassinoux, Marco Pierre White (in the white heat days)

Best cooking tip for a novice?
Don’t be afraid to season, use Salt, Fresh Ground Black Pepper and some sort of Acid.
What’s your last meal on earth?
Caviar, A5 Kobe topped with Foie Gras and Fresh White Truffle Risotto, oh ya and lots of Good Wine.

My Parents, unfortunately they both passed away before I became a chef.

Can I bring in my own food to your restaurant???? NO!

Just being a chef, I love what I do.
